Lembas Bread

Lembas Bread

Lembas Bread

Who has never wanted to taste the Lembas Bread, the Elvish bread of Tolkien's trilogy, "The Lord of the Rings"? There is no bread recipe in the book, only fan made ones. But after doing some research and digging a lot on the internet I discovered that there are approximate recipes of what would be the Lembas Bread. I’ve done some tests and the best recipe I’ve gotten is this one. Hope you like it!

2 cups of wheat flour
2 cups whole wheat flour
1/3 cup honey tea
½ orange juice
2 tablespoons raw sugar
½ teaspoon of salt
2 tablespoons butter
zest of orange peel
1 cup of rolled almonds
30g fresh yeast
Kale leaves for wrapping

First of all, activate the yeast by dissolving it in 1/3 cup of warm water and two tablespoons of sugar. Let it rest until it foams and fold in volume. Add the remaining ingredients in a bowl and mix thoroughly. Add the already activated yeast to the mixture and work the dough with your hands until it is homogeneous and separates from the fingers. If needed, add a little more wheat flour. Knead until  smooth na elastic and let the dough rest in the bowl for half an hour. Separate pieces of the dough and model squares of about 12x12cm and 1cm of height. Make a diagonal mark on the squares with a knife or ruler.
Lightly roast in a greased baking pan in the oven at 200ºC for 40 minutes.
Let it cool, separate the triangles and wrap them in washed and dried kale leaves. Tie it with a string.
