Orange Tea Cake
Prepare the tea first. For this cake you need to prepare a very strong tea. I use an orange flavored rooibos tea that I like a lot. But you can use the tea of your choice. I prepare the tea infusing three teaspoons of the herb for 5 minutes in 200ml (7 fl oz) of hot water and do not strain it. When the tea is ready you can start making the cake.
4 medium eggs
2 cup of wheat flour
1 cup of whole wheat flour
1 and ½ cup of raw sugar
200ml (7 fl oz) cup of a very strong orange tea
1 tablespoons of butter
2 tablespoons of baking powder
Butter and flour the cake pan.
Separate the yolks and whites of the eggs, beat the egg whites until firm and set aside.
In the bowl of the mixer mix the egg yolks, flour, sugar, butter and tea. Beat until the mixture is very homogeneous. Put the baking powder and mix well. Then add the egg whites gently with a wooden spoon.
Place on baking sheet and bake at 200 degrees for 45 minutes.
